Gum Arabic, also called Acacia Gum, is an emulsifying powerhouse! This natural, food-safe gum is obtained from the bark of the acacia tree.

• Used to thicken, emulsify and stabilize foods such as candy, ice cream, gelato and sweet syrups.
• Used in cake decorating to make gum paste.
